Caesar Salad Dressing

  • 1 Cup Extra Virgin Olive Oil
  • 2 tbs Cumbled Feta Cheese
  • 1 tsp Dijon mustard or to taste
  • 2 cloves garlic, miced, or to taste
  • 4 to 8 anchovy fillets, minced
  • 1 tsp Worcestershire sauce
  • 1/2 cup of grated Parmesan cheese, or to taste
  • 1/2 tsp Fresh lemon or lime juice
  • Salt and freshly ground black pepper to taste

Combine all of the ingredients in a food process or in a blender and process; or whisk together in a bowl. Taste and adjust seasonings.

Use as a salad dessing or dip for Romaine Leaves.

Variations: Use the listed quantities as a guide, adjust to your liking.

Caesar Salad Tip:
Grilled shrimp are an excellent ingredient for a hearty Caesar Salad meal. Let the shrimp cool a bit, chop, and top the salad.
